Shaped Halloween Eyeballs

If you've ever wanted to feel like you're being watched by your food, this recipe is for you. Our sponge cake eyeballs are a great texture modified treat for Halloween.

Ingredients

Sponge Cake

  • 200 g self-raising flour
  • 200 g unsalted butter
  • 160 g castor sugar
  • 3 large eggs
  • 1 tbsp vanilla extract
  • 4 tbsp milk
  • 1/2 tsp baking powder

Shaping Sponge Cake (Halloween Eye Balls)

  • 200 g vanilla sponge cake
  • 500 g milk, full cream
  • 4 scoops Shape It Powder

Buttercream Icing

  • 110 g icing sugar
  • 90 g unsalted butter, soft
  • Red food colouring
  • Blue food colouring
  • Brown food colouring

Instructions

Vanilla Sponge Cake

  • Preheat the oven to 170°C and line a rectangular baking tray with baking paper.
  • In a large mixing bowl, cream the butter and sugar using an electric beater.
  • Beat in the eggs one at a time, and then mix in the vanilla extract and milk.
  • Slowly add the flour and baking powder, and mix on low speed until the flour has been incorporated.
  • Pour cake mixture into the prepared baking tray and bake it for 25–30 minutes (or until a skewer inserted into the middle of the cake comes out clean).
  • Allow the sponge cake to cool on a wire rack.

Shaping Halloween Eye Balls

  • Lightly spray a Flavour Creations Half-sphere Mould with oil.
  • Add the sponge cake to a food processor and blitz it into fine crumbs.
  • In a medium-sized saucepan, add the milk and Shape It Powder. Bring the mixture to a boil over a medium heat, and whisk to combine.
  • Pour the milk-mixture into the food processor and blend it with the sponge cake crumbs to completely soak them.
  • Pour the resulting mixture into the prepared moulds and allow it to set in the fridge.

Buttercream Icing

  • Using an electric mixer, beat the butter until soft peaks form.
  • Gradually add the icing sugar as you mix. Once the icing sugar is fully incorporated, beat the mixture for 5–10 minutes until it is light and fluffy.
  • Divide the mixture into three portions and add the food colouring.  Mix one portion with the red food colouring, one with the blue, and one with the brown.

Assembling the Halloween Eyeballs

  • Take the cooled half-spheres out of the mould.
  • Pipe the blue icing mixture into the centre of each half-sphere (on the round side) for the iris.
  • Add a dot of the brown mixture for the pupil.
  • Add squiggles of the red mixture to make the veins in your ‘eyeballs’.
