American-style Hot Dogs

Ingredients

Hot Dog Buns

  • 100 g hot dog buns
  • 600 g full cream milk
  • 5 scoops A Shape It

Hot Dogs

  • 500 g hot dogs
  • 150 g chicken stock
  • 6 scoops A Shape It
  • ½ tsp Thick Plus

Diced onions (optional)

  • 250 g large brown onions
  • 20 g butter
  • 100 g milk
  • 4 scoops A Shape It
  • salt and pepper to taste

Bacon bits (optional)

  • 250 g bacon
  • 100 g chicken stock
  • 4 scoops A Shape It

Green relish (optional)

  • 1 jar pickled relish

Sauces (optional)

  • tomato sauce (ketchup)
  • American mustard

Instructions

Hot Dog Buns

  • Place the buns into a food processor and blitz into a crumb
  • In a separate pot add the milk and Shape It, bring to a boil and simmer for 2 minutes
  • Pour into the food processor and blend on high speed for 1 minute to ensure the mixture is completely smooth
  • Place mixture into a piping bag
  • Lay some cling film on the bench. Pipe some of the mixture onto the cling film. Using the cling film, roll the buns up and tie them off at the ends so you have a cylinder shape
  • Allow this to cool, then slice in half length ways so it opens up like a hot dog bun

Hot Dogs

  • Microwave the hot dogs for 3 minutes in a plastic container filled with water
  • In a separate pot add the chicken stock and Shape It powder, bring to a boil and simmer for 1 minute
  • Remove the hot dogs from the water using tongs as they will be very hot. Place them into a food processor and blend to a puree
  • Add the Thick Plus and stock to the mixture, blend for 2 minutes so the mixture is completely smooth
  • Lay some cling film on the bench. Pipe some of the mixture onto the cling film. Using the cling film, roll the hot dogs up and tie them off at the ends so you have a cylinder shape. Make sure to make the hot dog about half the thickeness of the hot dog bun
  • Allow to cool

Diced onions (optional)

  • Melt the butter in a fry pan, slice the onions and cook for 10 minutes until soft
  • Place into a food processor and blend until smooth, seasoning with salt and pepper
  • In a separate pan, add the milk and Shape It powder, bring to a boil
  • Add this mixture to the onions, blend for 2 minutes until smooth
  • Pour mixture onto a flat tray and allow to cool
  • Once cooled, cut out little squares of the onion puree to resemble diced onion

Bacon bits (optional)

  • Dice bacon and fry in a large fry pan for 5 minutes. Be careful not to make it too crispy as this will make it very difficult to blend
  • Once cooked, drain the fat off the bacon and keep to one side
  • Pour the bacon into a food processor and blend on high speed for 2 minutes until smooth
  • In a separate pan, add the chicken stock & Shape It, bring to a boil
  • Add this mixture to the bacon, blend for 2 minutes until smooth
  • Pour mixture onto a flat tray and allow to cool
  • Once cooled, cut out little squares of the bacon puree to resemble bacon bits

Green relish (optional)

  • Pour contents of jar into a suitable jug and using a hand mixer, blend until smooth
  • Pass through a sieve to ensure no lumps or any pieces remain

To Assemble

  • Warm the hot dog in a microwave for 1 minute 30 seconds
  • Place inside the sliced hot dog roll and then top with some of the diced onions and bacon bits
  • Drizzle with some of the pureed relish and then finish with tomato ketchup and American mustard

Notes

Feel free to add the condiments (relish, tomato ketchup and American mustard) before adding the toppings.
