Pikelets

These light, fluffy pikelets that are perfect for breakfast or dessert, and can be enriched with AdVital Powder for extra nutrition.

Ingredients

Unfortified

  • cup plain flour (185g)
  • ½ cup caster sugar (90g)
  • 190 ml full cream milk
  • 2 large eggs (59g)
  • butter
  • 1.1 L full cream milk
  • 1 scoop B Shape It

Fotified

  • 1 cup plain flour (150g)
  • ½ cup caster sugar (90g)
  • 190 ml full cream milk
  • 2 large eggs (58g)
  • 4 scoop AdVital (160g)
  • Butter
  • 1.1 L full cream milk
  • 1 scoop B Shape It
  • 1 scoop A Shape It

Instructions

Pikelets

  • Combine flour and sugar in a bowl.
  • Whisk milk, eggs, and if fortifying, AdVital. Add flour to mix, whisking until smooth.
  • Heat a non-stick frying pan over medium heat, melt a small amount of butter. Drop heaped tablespoons of the mixture into pan and cook for a few minutes or until bubbles appear on the surface.
  • Turn over and cook until puffed and golden.
  • Turn onto greaseproof paper and repeat steps 3 and 4 until all the batter is used.

Soaking

  • Break up 450g of pikelets (or 550g of fortified pikelets) into a food processor, pulse to crumbs, pour into a large bowl.
  • Whisk milk and Shape It in a saucepan, bring to the boil over medium heat and simmer gently for 2 minutes.
  • Pour hot solution over crumbs and mix well until smooth. Ensure all crumbs are completely saturated. Immediately pour mixture evenly into prepared container and smooth top. Cover with cling film and refrigerate until set.

To Serve

  • Use a scone or cookie cutter to make the size and shape desired.
  • Serve cold or warm. To serve warm arrange on plates or a tray, cover securely with cling film and steam until a safe temperature has been reached (do not overheat).
